Craft Day soup

Yesterday, we had a great little craft day here…the first inaugural I hope!  We had so much fun I’ve already scheduled one for next week.  Images to come from Mary Beth’s camera  ( I will actually be in a photo!)

I made Baked Potato Soup that Ali posted on her Facebook page this week.  You can find the link to the soup recipe here  Soup was super yummy…Lily actually ate two bowls for dinner, and that is saying something.  I tweaked up the recipe a little as I did not have 6 hours to cook it on high…here are my revisions.

1.  I used 5 cloves of garlic i/o 10 and pureed them along with everything else in the mix.  I also used the last of my Co-Op potatoes from the December Share (love love love potatoes from coop!)  along with a few misc ones that were in the crock.  Did not use all russets.

2.  I started everything on the stove…I sautéed the onions and garlic in some olive oil until translucent, then added the chicken stock and diced potatoes, I let it cook at a full boil until the potatoes were cooked through..

 

 

 

 

 

 

 

I also added some of this super yummy seasoning which contains salt…got it from my Farm Co-Op in the last pickup in December

 

 

 

 

 

 

 

Then I transferred everything to the crock pot to simmer on high while we all crafted.  I think it was in the crockpot about 4 hours or so.

 

 

 

 

 

 

 

At the end, I added the two bricks of cream cheese, one regular and one low-fat.  I had left them out on the counter to come to room temperature before I incorporated them…I think that made a big difference in stirring it all in.  I also used my stick blender to blend the entire pot of soup after I added all of the cream cheese (not part like in the recipe) and I don’t think it suffered at all.  Emulsified just fine…served it w shredded cheese, sour cream and bacon…totally forgot I had purchased scallions so now I need to find something to do with those!  Soup heated up nicely for dinner, make sure you add some water to thin it out a little as it will set up in the ‘fridge.
